Taking in consideration the significance of the problem the researchers try to indicate the dietary factors which positively influence the metabolic parameters among patients with metabolic syndrome. The aim of this study was to evaluate biochemical parameters of postprandial lipemia in patients with metabolic syndrome and the influence of dietary fatty acids, as well as n-3 PUFA supplementation, during the 3-months dietary intervention (high fat or high carbohydrate) . Before and after dietary intervention patient completed OLTT. The concentration of glucose, c-peptide, insulin, HOMA-IR, total cholesterol, LDL, HDL, TG, FFA, leptin, adiponectin, inflammation parameters such as: resistin, CRP, IL-6, TNF-α and parameters of endothelial dysfunction: vWF, sICAM, sVCAM were measured in fasting blood samples. Then, every 2 hour (in 2h, 4h, 6h and 8h) the levels of TG, FFA and insulin were measured. The conducted study indicates, that the appropriate selection of fatty acids can influence the parameters of postprandial lipemia. Moreover, it seems that the evaluation of biochemical parameters during the functional test, such as the OLTT is more sensitive, than the fasting blood samples’ measurement.
